Hello, friends! Lately, I've been feeling worn down. We're talking 2-4 cups of coffee, bags under my eyes, zombie shuffle and in bed by 8 PM kind of tired. Last weekend I whipped up some no-bake energy bars to grab on the go. They turned out better than I imagined! Since they are jam packed with protein they give me an extra boost of energy to help get me through the day.
Ingredients:
1 15 oz jar of peanut butter (or 2 cups)
1 8 oz jar of honey (or 1 cup)
1 tbsp vanilla extract
2 cups oats
1/2 cup chocolate chips
Melt the peanut butter and honey in a medium-size saucepan over medium heat. Add 1 tablespoon of vanilla extract.
Mix in 2 cups of oats.
Place mixture into a greased 8x8 pan or a loaf pan. Smooth the mixture. Sprinkle chocolate chips on top of the oats.
Place in the refrigerator to set.
It's seriously that easy! I prepare my energy bars in a loaf pan and cut them into bars that are about 1 inch wide. I then cut the bars in half. These little babies really help give me that extra "oomph" to get me through the day.
