This fabulously kid-friendly Ranch Hamburger Casserole with Tots is the perfect weeknight meal!
Hey, y'all! Let me just tell you, my twins are p-i-c-k-y. PICKY PICKY PICKY! I have the hardest time getting them to eat anything- but I guess this is the case with most two-year-olds. We got the boys when they were 1 1/2 years old and they were ridiculously underweight. We've worked really hard to help them put some weight on. Some of the few things that they'll eat are hamburger meat, tater tots, and cheese so I threw all of those ingredients together to form this simple, kid-friendly Ranch Hamburger Casserole with Tater Tots.
This can be made in either a 9x13 or an 8x8 pan. If you want the tots to cover the entire top of the casserole, I'd go with the 8x8. This meal is a breeze to throw together. Simply brown the meat, toss in some chopped onions and the seasonings and let the mixture cook until the onions are transparent. Pour some tater tots into your baking dish and top it with the beef and onion mixture. Sprinkle on some cheese and pile on the remaining tots and bake it off for about 25-30 minutes.
Ingredients:
1 bag frozen tater tots
1 1/2 lbs ground beef
2 tbsp ran seasoning
1 yellow onion, chopped
8 oz shredded cheddar cheese
Salt and Pepper, to taste
Instructions:
1. Preheat the oven to 450 degrees. Spray an 8x8 or 9x13 baking dish with non-stick spray. Set aside.
2. Brown the meat in a skillet over medium-high heat. Once the meat is fully cooked through, add in the seasoning and chopped onion. Cook until the onion is transparent.
3. Meanwhile, place half of the tater tots in the bottom of the baking dish. Top with the beef mixture and cheese. Season with salt and pepper. Layer the remaining tater tots on top.
4. Bake for 25-30 minutes or until the tater tots are golden brown.
