Skinny Girl Broccoli Slaw is a quick an easy salad made with crunchy broccoli, red cabbage, and a creamy, tangy low-calorie homemade coleslaw dressing. Not only does this salad taste phenomenal but it’s also really easy to throw together. Oh...and it doesn't use mayo which makes it even better in my book!

Ingredients:
2/3 cup Greek yogurt, plain 2 tbsp apple cider vinegar ½ tbsp. lemon juice 2 tsp sugar Salt and pepper, to taste 4 cups broccoli florets, fresh 2 cups red cabbage, shredded 1 cup matchstick carrots 1 sweet onion, minced (red onion works well too) ½ cup Craisins or raisins
Instructions:
1. In a small bowl, whisk together yogurt, apple cider vinegar, lemon juice, and sugar. Add in a bit of salt and pepper to taste.
2. In a large bowl, mix together broccoli, red cabbage, onions, and Craisins or raisins.
3. Pour the dressing on top and toss to coat.
4. Cover and refrigerate for at least two hours (the longer, the better!).
