Low Carb Taco Pie

Hey, y'all! I have to be honest, I haven't been doing Keto since we became a family of 5. It's not that preparing Keto dishes is any more complicated or time-consuming, I've just fallen out of the habit of skipping out on the carbs. We've just had to adjust our diets to accommodate the little ones- especially our picky 5-year-old.

Her dietary likes are limited- chicken nuggets, pizza (not homemade), tacos and cheeseburgers. That's pretty much it. I set out to find dishes that are similar to her favorites yet slightly healthier than what she's used to.

I decided to introduce her to my Low Carb Crustless Taco Pie. The ingredients are simple enough that she should like them, yet something that our more sophisticated palette enjoys as well.

The great thing about dishes like this is that you can customize them to your likings by adding all of your favorite toppings. I like to add salsa, slices of avocado, and cilantro to mine. Other great toppings include chopped tomatoes, olives, sliced jalapenos, sour cream, guacamole, and pico de gallo.

The heart of this recipe is my homemade taco seasoning. Trust me, using homemade makes all the difference in the world, but if you don't have time to make your own, you could always use store bought. I won't judge you. The taco seasoning recipe, listed below, makes more than enough for this dish. I double, triple, or even quadruple the recipe and store it in a mason jar in my cabinet for future recipes.

To say that this dish was a success would be an understatement. My family annihilated this dish! I am so stoked that our 5-year-old liked it so that we can have a low-carb dish to add to our Taco Tuesday Menu!

Kitchen Essentials:

Ingredients:

Taco Seasoning:

2 tbsp chili powder 1 tbsp paprika 1 tbsp coarse salt 1 tbsp black pepper, ground 2 tsp ground cumin 1 tsp garlic powder 1tsp onion powder 1 tsp dried oregano 1/4 tsp cayenne pepper (double this if you want a little more heat)

Taco Pie:

1 lb ground beef 3 tbsp taco seasoning (see above) 6 large eggs 1 cup heavy cream 2 cloves garlic, minced 1 cup shredded cheddar

Instructions:

1. Preheat the oven to 350 degrees. Coat a 9-inch pie pan with nonstick spray. Set aside.

2. Put all of the taco seasoning spices in a small bowl. Stir to combine. Set aside.

3. Brown the ground beef in a large skillet over medium heat until the beef is no longer pink. Drain off any excess fat. Stir in 3 tbsp of the taco seasoning. Mix until well incorporated. Spread the mixture in the bottom of the greased pan.

4. In a large bowl, combine the eggs, cream, and garlic. Slowly pour the mixture of the beef.

5. Top the pan with cheese and bake for 30 minutes or until the center is set and the cheese has browned. Allow the dish to sit for 5 minutes before serving.
