Zesty 3 Pepper Summer Salad


This vibrant 3 Pepper Salad is the perfect side dish for summer barbecues.

Hey, y'all! Summer is here which means one thing- it's BBQ season! I love a good barbecue as much as the next girl. Sure, the grilled meat is great but I'm all about the side dishes! No Mayo Broccoli Salad, Redneck Salad, and Southern Style Corn on the Cob with Milk and Honey are some of my favorites!

Another one of my favorites is this vibrant 3 Pepper Salad. It is the perfect side dish for summer barbecues. It honestly couldn't be any easier to put it together. Simply slice up a few colored peppers, and half a red onion, and coat it in a refreshing marinade. Ugh, yeah, that's it.

When preparing this salad, I typically julienne the peppers and onion. Julienne is the fancy schmancy cooking term for cutting it into long, thing strips.

Isn't it so pretty? Best of all, it requires zero cooking which means you won't heat up your kitchen by firing up your stove!

Kitchen Essentials:

Ingredients:

3 peppers of various colors (red, orange, yellow, or green), julienned 1/2 a red onion 1/2 cup fresh parsley 2 tbsp rice vinegar 1 tbsp sesame oil 1/3 cup crumbled feta Salt and Pepper, to taste

Instructions:

1. Core and seed 3 peppers. Julienne the peppers and red onion (see above) and place them in a large bowl.

2. Add the vinegar and oil to the bowl. Add salt and pepper, to taste.

3. Cover the bowl and allow it to marinate in the refrigerator for at least an hour. Toss with feta cheese and fresh parsley. Serve.
