Week #5
Meatless Monday
This Sweet Potato Pad Thai has everything you love about traditional pad Thai- the vibrant, spicy peanut flavors, the tanginess of Thai chili sauce, and a crunchy peanut topping served with spiralized sweet potatoes. If you want to add a bit of protein (aka) to this dish, consider serving it with Honey Garlic Meatballs.
Taco Tuesday
Taquitos or "Little Tacos" are a great addition to your Taco Tuesday menu! These taquitos are baked, rather than fried, making them a bit healthier than your traditional taquito. I love slathering them with my favorite toppings, including Slammin' Queso or Cowboy Queso. Enjoy them with Mexican Cauliflower Rice, Spanish rice or black beans.
Low Carb Wednesday
This Mashed Cauliflower Shepherd’s Pie is the ultimate low carb comfort food! It uses ground beef, cheese, cauliflower mash, and a few pantry items to form sheer perfection. This is the perfect Hump Day Meal!
Anything Goes Thursday
Forget about calling in for take out! This Baked Orange Chicken recipe is so incredibly simple and outrageously good! And best of all? It's baked! That means no deep-frying, no smelly hot oil, no greasy cleanup and no regrets for eating the whole batch. Serve with your favorite rice (white, brown, fried, or even cauliflower).
Pizza Fridays
Taco Tuesday and Pizza Friday combine to create this yummy Taco Pizza! Cover the pizza with all of your favorite taco toppings like peppers, tomatoes, guacamole, sour cream, and queso. This is a dish the whole family will love!
All-American Sundays
This Crock Pot Crack Chicken is a scrumptious combination of shredded chicken, bacon and a creamy, cheesy ranch sauce. It tastes delicious on a sandwich bun, in a lettuce wrap or on a baked potato. If you're in a rush, you can use the Instant Pot Shredded Chicken to whip up this dish in just minutes.
