Hey, y'all! I recently shared a delectable Low Carb Pizza Casserole recipe that had a rather surprising crust- one made of egg and cheese. Now, I totally get that the idea of having a pizza with eggs in it freaks some of you out so I wanted to share another low-carb pizza casserole recipe sans eggs.

This recipe is just as good, only much, much more simple. One thing I love about pizza casseroles is you can toss in basically any ingredients you want and it's going to come out fabulous! Casseroles are one of my favorite ways of cleaning out the fridge (wink, wink).

What I love most about this meal, aside from the sheer simplicity of it, is that it takes less than 30 minutes to throw together, especially if you're working with fully cooked meats like pepperoni. Of course, the more ingredients you add in, the more prep work you'll have to do- but that's just a small price to pay for this guilt-free, satisfying dinner.

Pepperoni Sausage Ground Beef Bacon Ham Mushrooms Spinach Tomatoes Olives Pineapple Onion Green Pepper Etc.

Ingredients:

14 oz pizza sauce 1 1/2 cups shredded mozzarella Toppings of choice 1/2 tsp oregano Salt and pepper to taste

Instructions:

1. Preheat the oven to 400 degrees. Spray an oval casserole with nonstick spray and set aside.

2. Pour the sauce at the bottom of the casserole. Top with shredded cheese and pile on your favorite toppings. Sprinkle on oregano and add salt and pepper to taste.

3. Bake for about 25 minutes or until the cheese is melted and starting to brown. Serve hot.
