Hey, ya’ll! So, I’m doing the keto thing, you know- all proteins and fats, no carbs and sugars. I have to tell you, it isn’t all that bad. Before we were doing a half-assed version of it so my body is already acclimated to a low carb diet. We’re a chicken and vegetables kind of household anyway. What’s killing me is the fact that there are currently 2 Cadbury Eggs and a bag of gummy bears sitting in the drawer behind me as I type. I actually don’t have much of a sweet tooth but knowing that I can’t have something makes me crave it just a little bit more.
We’ve been eating pretty well since we’ve started this endeavor. The other morning I wanted to create a casserole inspired by the Denver Omelet only to discover that we didn’t have ham. Rather than run to the store, I simply substituted in some bacon. I sprinkled in some bell peppers, red onion, and cheese and popped the casserole in the oven. The end result was delicious! We ended up eating off of the casserole for 3 mornings.
Normally, I’m not a breakfast girl but I’ve been trying to be better about getting my protein on early in the morning. With fabulous recipes like these, breakfast has been totally tolerable!
What makes this recipe even greater?
This recipe is freezer friendly. Yes, freezer friendly! Swap out your normal 9x13 pan for a foil baking pan with a lid. To freeze it, follow the instructions up to the baking portion. At that point, freeze the entire baking pan, unbaked. To cook it from frozen, simply bake it as state in the recipe with an addition 20-30 minutes added to the cook time (this will vary)
Kitchen Essentials:
Ingredients:
5 eggs
½ cup milk
5 slice of bacon, prepared
¾ cup + ¾ cup shredded cheddar, divided
½ bell pepper, diced
Instructions:
Preheat oven to 350 degrees. Spray a 13x9 pan (or a skillet) with nonstick spray and set aside.
Fry your bacon until it is crispy. Drain with a paper towel and set aside.
In a medium-sized bowl, combine eggs and milk. Whisk until well blended.
Add in chopped bell pepper, chopped bacon, and ¾ of the cheese. Stir to combine.
Pour the mixture into the prepared pan or skillet. Bake in the oven for 35 minutes at 350 degrees.
