Hey, y’all! I have to be honest, we don’t eat a ton of pork in my household. We’re chicken people, as I’m sure you could probably tell by the plethora of chicken recipes that get shared on my blog each month. Lately, I’ve been itching for a bit of a change and decided to play around with some pork recipes. I know, big day!
This Sunday, I prepared a dish that was so incredible I couldn’t wait to share it with you! I began by rubbing pork chops down with a blend of spices and pan frying it just until it had a nice coat. Next, I tossed the pork chops in the bottom of a crockpot and covered the meat with homemade salsa. I allowed the pork to cook nice and slow in the crockpot for four hours before we dug in.
Oh my goodness! It was super fabulous! The pork was fork tender, juicy and loaded with incredible flavors. Even Ashley, who doesn’t love pork, commented on how good the dish was. I have a feeling this quick and easy meal will be getting put into our regular rotation! It is the perfect meal to enjoy when you have a busy afternoon. You can simply forget about the pork as it cooks away in the crockpot.
What’s the deal with Cumin?
Cumin is a spice from Asia, Africa, and Europe. It can come in both seeds and as a powder. It has a nutty, peppery flavor. Cumin is known to balance blood sugar by increasing how sensitive cells are to insulin and glucose. Cumin is also rich in antioxidants and helpful in managing cholesterol.
Cumin also helps with digestion. The smell of cumin activates your salivary glands in you mouth, which helps get your digestive juices flowing. Basically, it gets your body ready to digest the food your putting inside of it.

Ingredients:
(for 4 pork chops)
3 tbsp butter
1/2 tsp ground cumin
3/4 tsp garlic powder
3/4 tsp salt
3/4 tsp pepper
1.5 pounds boneless pork
1/2 cup salsa (low carb)
5 tbsp lime juice
Instructions:
1. Melt butter in a skillet over medium-high heat.
2. Meanwhile, mix all of the spices in a bowl and rub the mixture on the pork.
3. Brown the pork on the stove for 5 minutes, flipping once.
4. In a separate bowl, mix salsa and lime juice.
5. Place the browned pork chops into the crock pot. Cover the meat with the salsa mixture.
6. Cook on high for 3 hours or until the pork reaches 160 degrees.
