Cheesy Mexican Ground Beef Bake

Hey, ya'll! I hope you're having a lovely, relaxing weekend. I'm taking a break from meal planning and laundry to share with you one of my favorite recipes from last week, a fantastic Cheesy Mexican Ground Beef Bake.

I am all about easy to make recipes, especially during the week. I work crazy long hours so it's nice to come home and not have to spend all evening in the kitchen. When meal planning, I pick recipes that can be prepared in under 30 minutes and require little cleanup for weeknights. This Cheesy Mexican Ground Beef Bake definitely fits that description. Not only is it easy to prepare, but it is also a keto dish that the whole family will love!

This yummy ground beef dish is really easy to throw together. You simply brown the ground beef with a few spices, stir in the cream cheese and shredded cheddar and bake it off until the cheese is melted. Yep, that's it! I told you it was super easy!

What should I serve with this dish?

You can serve rice, cauliflower rice, Mexican Cauliflower Rice, steamed broccoli, green beans or roasted asparagus with this dish. Really, you can enjoy it with almost anything as it is super versatile!

Kitchen Essentials:

Ingredients:

2 lbs ground beef 1 tsp sea salt 1/4 tsp black pepper 2 tsp garlic powder 1 tsp onion powder (or substitute 1/4 onion, diced) 1/4 tsp cayenne pepper 4 oz cream cheese, cubes 1/2 cup + 1/2 cup shredded cheddar cheese, divided 2 tbsp parsley, garnish

Instructions:

1. Preheat oven to 400 degrees.

2. Heat a large nonstick skillet over medium-high heat. Lightly spray it with olive oil. Add the

ground beef to the skillet. Cook until the meat is browned, breaking it up into small pieces as it cooks. Drain the beef and return it to the pan.

3. Reduce to the heat to medium. Mix in the spices and slowly mix in the cream cheese until it is fully melted. Mix in 1/2 a cup of cheddar cheese.

4. Sprinkle the remaining cheddar cheese on top of the ground beef mixture. Bake in the oven for about 10 minutes or until the cheese is completely melted. Garnish with parsley and serve.
