Instant Pot Shredded Chicken

Hey, y'all! By now, many of us have embraced the Instant Pot and begun using it as part of our daily routine. I have to admit, I find the Instant Pot rather intimidating. You see, I'm a bit of a puss puss and I worry about everything. I made the mistake of reading horror stories about pressure cookers and now every time I go to use mine I hover near it like a mother hen hoping and praying it doesn't explode.

I'm slowly getting more comfortable with my Instant Pot but my range is still very limited. I've used it to make 2 things- shredded chicken and Instant Pot Taco Soup. Okay, so maybe I'm a work in progress but I'm getting there. Truth be told, I actually use it to make shredded chicken rather frequently. Preparing shredded chicken in an Instant Pot is a great way to help cut down on your meal prep time. Shredded chicken can be used in dishes like Chicken Salad, tacos, stir-fries, casseroles, stews, etc. It's excellent to have on hand when putting together last minute meals.

I've used this shredded chicken for other great recipes like Buffalo Chicken Dip, BBQ Chicken Naan Pizza, Cheesy Chicken, Broccoli and Rice Casserole and my Good Ole Fashioned Chicken and Rice Casserole (The #1 recipe on Maps & Monograms!)

When preparing shredded chicken, I usually make a large batch and divvy it up into containers to freeze to use at a later time. This recipe can be adapted for smaller amounts of chicken as well (although when I make a smaller batch, I use the same amount of liquids.) If you half the recipe, you can cut the cook time down to 15 minutes.

Note: There are many recipes that indicate you can cook the chicken in less than 6 minutes. This is true for smaller quantities of chicken. You can try cutting back on the cook time, just make sure the chicken reaches a temperature of 165 degrees Fahrenheit.

This recipe can be adapted for the crock pot, as well. In fact, until I purchased my Instant Pot, I always prepared my shredded chicken in a crock pot. Simply follow the same preparation instructions and cook on low for 4 to 6 hours or until the chicken is done.

Kitchen Essentials:

Ingredients:

4 pounds chicken breast 1/2 cup water or chicken broth 1 tsp salt 1/2 tsp black pepper

Instructions:

1. Add all of the ingredients into your Instant Pot.

2. Secure the lid and close the pressure valve. Cook for 20 minutes at high pressure.

3. Once 20 minutes have past, use the quick release to relieve the pressure from the pot.

4. Use two forks to shred the chicken.

5. Store the chicken in an air-tight container with the liquid to help keep the meat moist.
