Hey, ya'll! If you're one of the many subscribers to the Maps & Monograms newsletters, you may have caught wind that we're back on a low-carb, low-sugar diet now that we're back from our cruise to The Bahamas. I lost 12 pounds between June and November just be cutting down on these two things...but along came the holidays and a week of sailing on a ship eating burgers, pizza and ice cream every day. I was scared to step on the scale during the holiday season. I was afraid that I gained it all back.
Last night, I took a deep breath and tip-toed back on the scale to see what my damage was. Somehow, I managed to only gain 3 pounds back over the last month and a half; not bad!
Since we got back from our trip, I've gone back to cooking how I did this fall. I'm really hoping to get back on track so that I can continue to lose the weight. I wouldn't say that we're doing keto, it's more of a half-assed version of it but what we are doing seems to be working so I'm sticking to it.

Now ya'll know I'm all about quick and easy meals. If I can whip something up in less than 30 minutes using only a handful of ingredients and have very little cleanup, I'm all about it!
Meatballs are a great thing to have on hand because not only do they make great appetizers for parties (or football!) but they are also fantastic for dinner. I love whipping up a big batch of meatballs and freezing them so that I have them on hand. These meatballs are baked and jam-packed with flavor. You could use ground turkey instead of ground beef if you'd like to make your dish even more healthy.
You know what else meatballs are great for? Meal prep! I've been big on meal prepping lately. I love making dishes like Philly Cheesesteak Stuffed Peppers, Taco Salad, BLT Salad, Honey Garlic Chicken, Chicken Burrito Bowls, and 10 Minute Chicken Salad with Dried Cranberries and Walnuts. These are all great dishes to meal prep and take to work throughout the week.
Now that we've cut back on the carbs, I've had to change up my meatball recipe a little bit. My original meatball recipe (which is soooo stinking good) but it uses quick-rolled oats as a binder. This recipe uses whole wheat panko crumbs, instead. Either way, your end result will be fabulous. I now use this new recipe to make incredible dishes like Taco Meatballs and Honey Garlic Meatballs...and now these guys Honey Sriracha Glazed Meatballs.
I have to admit, I was a little late jumping on the sriracha train. It wasn't until I started making Sweet + Spicy Honey Sriracha Chicken that I fell in love with it. There's something about the combination of honey and sriracha that just works. It's like peanut butter and jelly.

This recipe creates about 40 meatballs.

Ingredients:
For the Meatballs:
2 pounds lean ground beef (or lean ground turkey) 1 cup whole wheat panko crumbs 2 eggs 1/4 cup green onions, chopped 1/2 tsp garlic powder 1/2 tsp salt 1/2 tsp black pepper
For the Sauce:
1/4 cup sriracha 3 tbsp reduced-sodium soy sauce 3 tbsp rice vinegar 3 tbsp honey 1 tbsp grated fresh ginger 3 cloves garlic, minced 1/2 tsp toasted sesame oil
Instructions:
1. Preheat oven to 375.
2. In a large bowl, use your hands to mix together ground meat, panko crumbs, eggs, green onions, garlic powder, and salt and pepper until well combined.
3. Shape the mixture into 1 1/2 inch balls (this recipe will make about 40 meatballs).
4. Bake meatballs for 20 to 25 minutes or until cooked through.
5. While the meatballs are baking, combine all of the ingredients for the sauce in a small saucepan. Whisk continuously over medium heat until the mixture comes to a boil. Reduce heat and simmer for 8 to 10 minutes. The sauce will begin to thicken.
6. Toss the sauce with the meatballs and serve over brown rice, steamed vegetables or cauliflower rice.
