Hey, y'all! Our former foster son loved tacos. Each Tuesday we would head to a nearby restaurant to chow down on $1 tacos. For less than $10, we could feed our little family and hang out with good friends.
Even on weeks that we didn't visit the restaurant, we had taco-inspired dishes at the house. Delicious dishes like Sweet Potato Tacos, Thai Peanut Chicken Tacos with Pineapple Broccoli Slaw, or even Walking Tacos. Sometimes I'd switch things up a bit and serve Taco Soup or Taco Pizza. We also expanded our Taco Tuesday's to feature fajita inspired dishes like Delicious Fajita Stuffed Hassleback Chicken, which inspired today's recipe.
Even now, with our little guy back at home with his biological family, we still celebrate Taco Tuesdays. Last week, I prepared this yummy Easy Chicken Fajita Bake. This dish requires little prep, just a few simple ingredients and comes together in about 30 minutes. Oh...did I mention there's barely any cleanup? If that doesn't make it perfect for a weeknight meal then I don't know what does.
Not only is this dish simple to throw together, but it also is packed with wonderful flavors in every bite. Unlike traditional fajitas, this recipe is served with the chicken breast as a whole. However, you could easily cut the chicken into strips and enjoy it with tortillas. I typically serve it with rice and/or beans and skip the tortillas to help keep it low-carb and gluten-free. I'll also sometimes serve it with steamed veggies to keep it keto-friendly.
Short-Cut: Use a pre-sliced veggie blend rather than slicing your own peppers and onions.
What Should I Serve with Chicken Fajita Bake?
Kitchen Essentials:
Ingredients:
4 boneless, skinless chicken breasts (about 2 pounds) 1 tbsp fajita seasoning 1 1/2 bell peppers, sliced (red, yellow, orange, green or a mixture) 1 medium yellow onion, sliced 8 oz sharp cheddar cheese or Mexican blend cheese, shredded
Optional toppings: cilantro, sour cream, salsa
Instructions:
1. Preheat the oven to 375
2. Lay the chicken breasts flat in a baking dish. Sprinkle the fajita seasoning evenly over the breasts.
3. Slice the bell peppers and onion. Toss to combine. Spread the vegetable mixture evenly over the chicken breasts. Cover with cheese.
4. Bake on the middle rack of the oven for 30-40 minutes or until the chicken is cooked through.
5. Top with optional toppings and serve with rice or on tortillas.
