Hey, y'all! How are your Christmas preparations coming? I'm going to be 100% honest, I'm way, way behind. Between all of the things going on with the kids, buying a new house, moving, and all of the normal day-to-day stuff, I've gotten pretty much nothing accomplished. I've managed to buy for 1 of my 4 nieces and that's it.
Crap, now that I've typed all of that out, I feel a bit overwhelmed.
Hopefully, you're in better shape than I am! As you're sitting down to plan out your menu for your holiday celebration, I thought I'd share with you some pretty bangin' side dishes that will add a bit of flair to your dinner table.
Absolutely Incredible Holiday Slaw- Add some freshness to your holiday menu with this fabulous Holiday Slaw featuring delicious Brussels sprouts, almonds and dried cranberries in a tasty cranberry dressing. This scrumptious green and red salad is so good even the Brussels sprouts haters will come back for seconds! Two other great salads for your holiday menu are Crispy Brussels Sprouts Salad and Shredded Bliss Salad.
Boursin Cheese Mashed Potatoes- You won't believe how delightful these super simple mashed potatoes are! Simply boil and peel some Yukon potatoes, stir in some cream cheese and half and half and add in a bit of Boursin cheese. These potatoes might just steal the show! If you just so happen to have any left over potatoes, you could use them to make Loaded Potato Eggrolls!
Parmesan Cheese + Rosemary Potato Stacks- A super simple and tasty potato side dish that is guaranteed to impress your guest! Shhh, they don't need to know how easy these are to make! Use a mandolin to slice potatoes super thin. Lather them with herb butter, stack the potatoes in a muffin tin and sprinkle on a bit of parmesan cheese. These potatoes taste fabulous with beef dishes (mmmm prime rib), pork and ham. Leftovers would be perfect to use in my Ham and Potato Casserole!
Sour Cream + Chive Potatoes- These potatoes are jam-packed with chive and garlic flavors. This delicious, creamy mashed potato recipe is great for holiday meals! The sour cream not only makes the potatoes super creamy but it also gives them a little tang.
You've tried baked sweet potatoes, sweet potato casserole, and candied potatoes, but have you tried maple whipped sweet potatoes? These deliciously creamy potatoes are an excellent addition to your holiday menu! Oh, and I know what you're thinking, and the answer is YES you can make these ahead of time!
Autumn Harvest Medley- Roasted Brussels sprouts, festive butternut squash, dried cranberries and, pecans come together to form a glorious medley of fall flavors that are perfect for Christmas dinner!
Corn Puddin' aka Corn Casserole- This quick and easy Corn Casserole is the BEST! It is so delicious that it is the only recipe you'll ever need! This dish is often served for holiday meals here in the south. Roasted Ranch Flavored Baby Carrots- In the south, we love 3 things, cornbread, sweet tea, and ranch. Seriously. Ask anyone. Roasting the carrots, rather than boiling them, helps bring out all of the vegetable's flavors and leaves them fork tender. The ranch seasoning is an excellent compliment to the carrots.
Garlic Roasted Asparagus- Asparagus just might be my favorite vegetable. They are so incredibly versatile and there are so many ways to prepare them. Some of my favorite recipes are Jacked Up Asparagus and Prosciutto Wrapped Asparagus but nothing is better than plain old, Garlic Roasted Asparagus. It takes less than 5 minutes to prepare it and about 20 minutes to cook and I'm telling y'all, it is heaven!
Easy-to-Make Garlic + Herb Knots- What is Christmas dinner without the rolls? These Garlic + Herb Knots are super quick and easy to make and will an excellent addition to your dinner menu.
