Beef Burrito Bowl

Hey, ya'll! We've been doing a low-carb diet for a few weeks now and I have to admit, it doesn't suck. Sure there are times where I want to bury my face in a bowl of spaghetti noodles and slurp the noodles up until the plate is clean but for the most part, it hasn't been difficult. We've still managed to enjoy most of the foods that we normally would have before, I've just had to play around with the ingredients to make them a little healthier Now, we're not full fledge keto-ing it up. We've just cut back on the carbs and sugar.

I've been making some pretty bangin' meals- Pork Eggroll Bowls, Philly Cheesesteak Stuffed Peppers and Taco Meatballs, just to name a few. Needless to say, we're still eating well! Oh, and... we still get to enjoy Taco Tuesdays, just a little differently these days.

One of my latest creates is a Beef Burrito Bowl, perfect for Taco Tuesdays or meal-prepped lunches. It combines all of the flavors of a burrito into a delicious bowl of goodness. It tastes just like a burrito without all of the guilt!

I mean, just look at it! Doesn't it look delicious? Once you have the base mixture, you can top it with anything your heart desires. I like to load my up with cheese, salsa, guacomole and cilantro.

Ingredients: 1 pound of ground beef 1 package taco seasoning 1 tbsp coconut oil 1 red pepper, diced 1/2 white onion, diced 1-2 cups shredded cheddar Toppings: salsa, guacamole, sour cream, cilantro, etc

Instructions:

1. Brown ground beef in a large pan. Add taco seasoning, and water according to package instructions.

2. Meanwhile, warm coconut oil over medium heat. Sautee peppers and onions.

3. Add sauteed vegetables to the ground beef. Add cheese to the beef and vegetable mixture. Stir to combine.

4 Serve with your favorite toppings.
