Absolutely Incredible Pork Egg Roll in a Bowl

Hey, y'all! So... believe it or not, I'm still holding strong with the low-carb diet. It's a little less keto and a little more being mindful of what I'm eating, whatever you call it- it's working. I've lost a couple of inches and shed a few pounds and I couldn't be happier.

Since switching to this new lifestyle, I've created all kinds of new recipes. Dishes like Philly Cheesesteak Stuffed Peppers, Fiesta Stuffed Peppers, and Taco Meatballs are becoming regulars on our menu. One of my new favorite dishes is a Sausage Egg Roll in a Bowl- a delicious combination of ground sausage, cabbage, carrots, and Asian flavors.

Whenever we order Chinese food, Ashley gets an egg roll on the side. One night, I decided I was going to try to recreate the flavors of a pork egg roll in a delicious, low-carb bowl recipe. Basically, I created the stuffing of an egg roll and served it in a bowl, rather than cramming it into a wrap.

Believe it or not, it's incredibly filling and oh so good! It'll totally fulfill your takeout craving and can be whipped up in less time than it can be delivered.

This recipe is a little flexible. I've used ground pork and ground beef but you could also use ground turkey, ground sausage, or ground chicken. Basically, if it's a ground meat- it'll work!

Last week I made a batch of this stuff and ate off of it for lunches throughout the week. I'm telling you, I looked forward to lunch every single day! This stuff is so stinking good!

Kitchen Essentials:

Ingredients:

1 pound ground pork 6 cups of coleslaw mix (or shredded cabbage and matchstick carrots) 4 cloves garlic, minced 1 tbsp ginger, minced 1 tbsp soy sauce 1/4 cup green onions, chopped 1 tbsp sesame oil (optional) Sriracha, to taste (optional)

Instructions:

1. Heat a large skillet over medium heat. Add ground meat and cook, stirring often, until cooked through. Do not drain.

2. Add the coleslaw mix, garlic, ginger and soy sauce to the skillet. Cook for 4 minutes or until the cabbage has softened.

3. Remove from heat. Top with green onions and drizzle with sesame oil or sriracha.
