Barfing Pumpkin Nachos


These totally gruesome Barfing Pumpkin Nachos will sure to be a hit at your Halloween party!

Hey, y'all! What's not to love about fall? Fall gives you the opportunity have a little extra fun, be whimsical and well, even a little gross! This is one of my favorite times of year! Unfortunately, we're in the process of buying a house (yay!) so it is kind of pointless for me to decorate this season (boo!) since we'll have to start packing soon. I put out my totally adorable fall welcome mat, and put out 3 or 4 little things but it looks that that will be the extent of it this year.

Since I can't necessarily decorate this season, I'm getting into the spirit of autumn with some of the foods we're eating. If you're familiar with Maps & Monograms, you know that I am a diehard football fan. Football consumes our Saturday's and Sunday's here in my household (and in much of the south). I even have a mini-series called Saturday's Snacks where I share a brand new appetizer recipe that is perfect for football each week.

If you're a regular, then you also know that I love, love, love pumpkin #sobasicIknow Some of M&M's most popular pumpkin recipes are Pumpkin Pie Overnight Oats, Roasted Pumpkin Soup and Pumpkin Energy Bites. I even have a Pumpkin Spice Margarita recipe that is insanely popular this time of the year. For this post, I combined my love of football with my love of fall and came up with this slightly morbid Barfing Pumpkin Nachos recipe.

Yes, I went there.

This barfing pumpkin would be excellent for your Halloween Party or Costume Party...or you could be like me and just serve it as an appetizer for a football game.

To recreate this glorious monster, simply cut some shapes into a pumpkin to create a jack-o-lantern. Scoop out all of the seeds and guts making sure you save the seeds so you can try my Ranch Flavored Roasted Pumpkin Seeds!

Place the pumpkin on a clean, flat surface (I used a plastic cutting board but a fun Halloween platter would be even better!). Use a spoon to create the guacamole vomit. Make sure it cascades out of there really well so you get the full effect! Add a bit of salsa and queso and serve the blue corn chips.

This is one of my favorite guacamole recipes.

Ingredients:

1/2 lime 1/4 tsp sea salt 1/4 tsp pepper 1/4 tsp garlic 1-2 Haas avocados, large 2 tbsp red onions, finely diced 2 tbsp jalapenos, finely diced and seeds removed 2 tbsp fresh cilantro, finely chopped 1/3 cup tomato, diced

Instructions:

1. Squeeze lime into a bowl. Add in the spices and stir.

2. Add avocado to the bowl and mash.

3. Stir in the remaining ingredients.
