Kielbasa + Pineapple Bites


This super delicious Kielbasa and Pineapple Bites recipe is the perfect appetizer to make in a hurry. They take just minutes to prepare and taste excellent!

Hey y'all! It's Saturday! Saturdays around here mean one thing- it's time for Saturday's Snacks! Each week I share with you a brand new recipe perfect for football. So far this season I've shared my recipes for Low Carb Fiesta Stuffed Peppers, Barbecue Chicken Naan Pizza, and 4 Fabulous Ques Recipes Perfect for Football.

This week I am sticking with last week's low carb appetizer trend and sharing an appetizer that won't take your belt up another notch. And like almost all of my Saturday's Snacks recipes, this one takes just minutes to prepare meaning you won't have to spend the entire game in the kitchen. Cha-ching! In fact, this may be the easiest recipe I've ever showcased on Maps & Monograms. I mean...it may not even really be a recipe.

Are you ready to get started?

You simply slice a bit of kielbasa into bite-sized pieces- I make mine about the same size as a chunk of pineapple. Place the sausage in a skillet and cook it over medium heat until it is browned on each side. Once browned, place the kielbasa on a plate or serving platter. Use a toothpick to attach a piece of pineapple chunk to each kielbasa. Serve warm.

Yep... that's it. Sometimes, if I'm feeling super fancy, I will pour the can of pineapple chunks into a small saucepan and cook it over medium heat while the kielbasa is browning. It will reduce the syrup down just a tad and make the pineapple a little sweeter, but really- this step is totally unnecessary. You could totally omit this step if you wanted to.

Ingredients:

1 package of kielbasa, cut into bite-size pieces 1 can of pineapple chunks, in a light syrup

Instructions:

1. Cut the sausage into bite-size pieces. I try to make them about the same size as the chunks of pineapple. Place the sausage into a skillet with a little bit of oil. Lightly brown on both sides.

2. Meanwhile, pour the can of pineapple into a small saucepan and simmer on medium heat.

3. Place the cooked sausage on a bit of paper towels to help absorb excess fat.

4. Put sausage on a plate or serving dish. Place one piece of pineapple on top of each kielbasa. Use a toothpick to secure the pineapple to the kielbasa. Serve warm or at room temperature.
