These adorable little Meatloaf Cupcakes come together in just minutes and taste fantastic! Why sit around and wait for a traditional meatloaf to cook while you can have it on your table in 30 minutes!
Hey, y'all! Meatloaf has always been one of my favorite dishes. It was one of my dad's go-to dishes on nights that he had to cook dinner. Dad was always so cute when he made meatloaf because he would always use ketchup to write my name on top of the meatloaf before he baked it. In fact, to this day he still does that when he makes it...whether I'm over for dinner or not. Isn't that adorable?
This Mini-Meatloaf Cupcake recipe was inspired by my dad's meatloaf. My favorite thing about this version is that it doesn't take forever for it to bake in the oven which means I don't have to wait nearly as long to devour it! Shortly after we got our two foster children, I made this dish for our little guy and he tore it up. Unfortunately, he doesn't like mashed potatoes (whaaaatttt?????) and he flipped out when he saw me start to pipe mashed potatoes on the meatloaf cupcakes. So...to spare us all from him having a melt down, I didn't create little mashed potato frosting like I wanted to. Total buzz kill, trust me.
Despite that, these little guys are ultra delish! They are really easy to throw together which makes them perfect for weeknights!
Ingredients:
1 pound ground beef
1 egg
3/4 cup milk
1 cup cheddar cheese
1/2 cup quick oats or bread crumbs
1 tsp salt
2 tsp Italian seasoning
2 tsp garlic powder
2 tsp onion powder
2/3 cup ketchup + more for drizzle
Instructions:
1. Preheat oven to 350. Spray a muffin pan with non-stick spray. Set aside.
2. Combine all ingredients a medium-size mixing bowl. Use your hands to dig in there and mash them together really well.
3. Press the mixture into a muffin pan. Drizzle a little bit of ketchup on top of each meatloaf cupcake.
4. Bake for 30 minutes.
5. Pipe mashed potatoes on top or serve as is.
