Hey, y'all! In case you couldn't tell, I'm kind of on a corn kick this month. This is the fourth corn recipe I have posted in the month of July (see Crock Pot Cheddar Corn, Creamy Confetti Corn with Bacon and Cowboy Caviar). I guess you could say I've become a corn fiend... we're seriously eating corn about 3 times a week in our household. Since we are eating so much of it, I've tried to make it a little different every time so we don't get tired of it. I'm big on pushing veggies and you can't get much simpler than good old-fashioned corn. It's quick, easy, versatile and goes with pretty much everything.
I've run out of awesome corn stories so I'll just get to the point and tell you that the other night I made my delicious Crispy Baked BBQ Chicken and needed something to serve with it. I whipped up a pasta salad and you guessed it...corn! I was craving my delicious, creamy Crock Pot Cheddar Corn but didn't have time to make it so I adapted the recipe and came up with a stovetop version instead. I didn't have cheddar cheese so I substituted Pepperjack Cheese and man oh man was it on point!
Y'all, I struck gold on this one (get it...cause it's yellow??)! This corn recipe tastes just like macaroni and cheese only it is a gazillion times easier. I actually ended up making this dish two nights in a row. Thankfully, I jotted down my recipe as I went along because this quickly became a new family favorite.

This recipe serves about 3 people but can easily be doubled to feed a family.
Ingredients:
1 can of corn, drained
4 oz cream cheese
1/2 cup shredded pepper jack cheese
2 tbsp butter
1/4 cup milk
Salt and pepper, to taste
Instructions:
1. Combine all of the instructions in a saucepan over medium-high heat. Cook until all of the cheese has melted, stirring occasionally.
You may need to add a little bit more milk, depending on your corn. If so, just add a tablespoon at a time until you get your desired consistency.
Uh...yeah, that's it. It basically requires zero cooking skills and can be whipped up in about 10 minutes making it the perfect side dish for a busy weeknight. It is also sophisticated enough that you could add it to your holiday menu...because, really...who wants to spend their entire holiday in front of the stove?
