Hey, y'all! Can I tell you a secret? This is probably something you'll never guess, especially if you're a regular to the blog... I'm lactose intolerant. Like full on lactose intolerant. I have been since the day I was born. 34 years of this nonsense has taught me one thing- somethings are worth the belly ache. Queso is one of those things! Y'all, I love me some queso. I could totally lick a bowl of queso clean. It's kind of embarrassing actually...
Want to know something else? I'm known for my queso. I make the same queso for every party I host- my Slammin' Queso. Y'all this stuff is AMAZING! It's a perfectly creamy combination of sausage, cheese, and diced tomatoes. A lot of times when I go to parties, my friends ask me to make a batch and bring it along.
Every year my teacher friends and I get together to celebrate the end of the school year. In the past, I've always hosted the party but I've relinquished those reins and now another friend hosts the party. This year she wanted to host a fiesta with a taco bar. We all signed up to bring something so I of course, signed up for queso.
Little did my friends know...I was switching up the recipe on them! Now, I've played with quite a few recipes. I have a Philly Cheesesteak Queso that is fabulous and I recently came up with a Cowboy Queso inspired by a friends Cowboy Salsa recipe. All of those recipes are wonderful in their own right, just as good as Slammin' Queso but I was dead set on developing a Queso Blanco, or white queso.
I began by researching other white queso recipes and found that a lot of them used Velveeta, but quite honestly, I'm not a huge fan of Velveeta. I couldn't find a recipe that I loved, so I hit the kitchen and came up with one myself.
When I showed up to the party, with a recipe other than my Slammin' Queso, my friends were a little disappointed...until they dug in. Y'all, they tore this stuff up! It's so stinking good! We ate it with chips, poured it over nachos and piled it on to our tacos. I even got the go ahead to make it again!
It looks like I'll be preparing two quesos for my parties from now on.
Ingredients:
8 oz sliced White American Cheese, 4 oz Pepper Jack cheese, cubed
4 oz Vermont White Cheddar, cubed 8 oz cream cheese 1/2 cup heavy cream 1 jalapeno, seeded and chopped 1/2 tsp garlic powder 1/4 tsp cumin
Instructions:
1. Place all of the ingredients into a medium-size pot over medium-high heat. Cook until all of the ingredients are melted and well combined.
2. Garnish with fresh cilantro or pieces of chopped jalapeno.
You could also prepare this dip in a crockpot. Simply place all of the ingredients into a crockpot, cover and cook on low for 4 hours.
