Y'all, this stuff is AMAZING and requires very little prep. Simply toss all of your ingredients into the crock-pot and let the flavors meld together to form perfection!

Hey, y'all! Yesterday I shared with you some of my favorite side dishes perfect for barbecues. As I was typing out my list of favs, I was shocked to find out that I haven't shared with you one of my favorite corn recipes- Crock-pot Cheesy Corn. Y'all, this stuff is amazing! Like, totally incredible. Crock-pot Cheesy Corn is a fabulous combination of cheddar, cream cheese, heavy cream, corn and of course, butter (I mean...hello, this is a Southern dish!).
My favorite thing about this recipe is how simple it is to make. You literally just throw all of the ingredients into the crock-pot, give it a quick stir and forget about it. My second favorite is the fact that this recipe makes a ton of corn aka you're going to have leftovers. Yay, right? Of course, you could always half the recipe, but why would you do that to yourself? Because this recipe makes so much corn, it's perfect for potlucks, cookouts, and any other time you might need to feed a crowd.
This is seriously one of the best corn recipes that I've ever tried, and believe me, I'm a corn expert. My parents grew up in farm country, amongst acres upon acres of corn fields. I've eaten a ton of corn in my day and y'all, this is seriously one of my favorite ways to chow down. This recipe is smooth, creamy and so damn good!
Earlier this month, we graduated from PRIDE Class, the courses we had to take in order to become foster parents. On Graduation Day, we had a potluck to celebrate. I knew right away that I wanted to bring this fabulous corn dish. I threw everything into a crock-pot at the house and got ready to head downtown. I was so afraid that my crazy driving would send the crock-pot flying around the back of my car so I strapped it in and hoped for the best.
Lucky for all of us, the corn survived the trip. My class mates went to town on this corn...and I gotta admit, I may have had two or three servings of it myself. It was a total hit! I ended up giving the recipe to three different people before the day was over. It's that good!
Ingredients:
32 oz frozen corn 8 oz cream cheese 1 cup shredded cheddar cheese (more if you're feeling frisky) 1/4 cup butter 1/4 cup heavy cream Salt + Pepper, to taste
Instructions:
1. Combine all of the ingredients in a crock-pot. Cover and cook on low for 3 1/2 to 4 hours stirring occasionally.
