Hey, y'all! Elle here with another quick, easy, healthy and delicious lunch idea! As you may know, I'm home for the summer living that #teacherlife. Unfortunately, that doesn't mean sitting around doing absolutely nothing. I've been busy studying for my ESOL Certification Exam, dealing with work drama, babysitting my nieces and finishing up with our foster parenting licensing. June has been busy, to say the least.

Come lunchtime, it's so easy to pop in some pizza rolls and munch on those guys instead of a healthy lunch. I've tried coming up with some healthier alternatives, like Low Carb Chicken Burrito Bowls. This week I've been chowing down on another simple lunch idea that is out of this world: Thai Peanut Tacos.

If you hadn't noticed, I have a strong love affair with Asian inspired food. Recipes like Sheetpan Thai Peanut Chicken with Pineapple, Thai Chili Chicken, Baked Orange Chicken and Honey Garlic Chicken and Veggies are staples in my household. And as you could probably tell, we eat a lot of chicken around here. All of these recipes are simple to make and taste phenomenal.

I decided to mix two of my favorite foods together, Thai Peanut Chicken and tacos. Although my Sheetpan Thai Peanut Chicken with Pineapple would be perfect for the tacos, I decided to take a shortcut so that the meal prep was a bit easier aka no breading!

Rather than making my own sauce, I bought a jar of peanut satay from the Asian food aisle. My sauce tastes better (like way better!) but this short cut makes the recipe even simpler. I also bought a package of broccoli slaw, rather than taking the time to make my own.

I like a little bit of extra carrots in my broccoli slaw, so I bought some matchstick carrots to toss into the mix. If you want to cut down on the cost of the ingredients, you could leave these out since the broccoli slaw already has some carrots in it.

Kitchen Essentials:

Ingredients: 1 pound chicken breast, cut into bite-size pieces Thai Peanut Satay, to taste (I like to use a lot) Flour tortillas 1 package broccoli slaw 2 cups pineapple, chopped 1/4 cup matchstick carrots 1 tbsp lime juice 1 tbsp brown sugar Green Onion, to taste

Instructions: 1. Add 1 tbsp olive oil to a large skillet over medium-high heat. Add chicken to the hot pan. Cook until no longer pink.

2. Add in the desired amount of Thai Peanut Satay. Cook for approximately 5 minutes. Remove from heat.

3. While the chicken is cooking, prepare the slaw in a large bowl by combing broccoli slaw, pineapple, carrots, lime juice and brown sugar.

4. Spoon the chicken mixture onto your tortilla. Top with pineapple slaw and green onions. Add Sriracha, if desired.

**Note** When I snapped the photos for this post, I didn't have pineapple so I left them out of the recipe. While you can absolutely do this, the pineapple definitely helps make the taco taste absolutely amazing! Without it, the taco is a little dry**
