Red, white, and blue sprinkles add a little flair to this classic American dessert!
Hey, y'all! Summer is right around the corner. I can almost smell the campfires and barbeques now! My parents just purchased a super cute camper, so I'm looking forward to spending some time hanging out with them... you know mooching off their camping food.
In fact, they went camping this weekend at a campground about 10 minutes from my house. On Saturday, I joined them for dinner and brought along dessert. With Memorial Day coming up, I wanted to do something patriotic. My old man loves chocolate chip cookies and ice cream sandwiches so I decided to marry the two together and make him Chocolate Chip Cookie Ice Cream Sandwiches.
I'm going to be honest, I totally took a shortcut with this dessert. I was lazy and didn't bake my own cookies, I just picked up a dozen from the local bakery. Trust me, I thought about being even lazier and just buying pre-made ice cream sandwiches and just rolling them around in patriotic sprinkles, but I fought the urge. But seriously, wow, what a great shortcut that would be for someone who is pressed for time!
To make the Chocolate Chip Cookie Ice Cream Sandwiches, I placed one cookie face down on a clean, flat surface. I plopped a dollop of ice cream on top and covered it with another cookie. I let the sandwiches set in the freezer, just so the ice cream had a chance to harden back up. When I was ready to serve, I rolled the cookies in patriotic colored sprinkles.
As far as the ice cream goes, you possibilities are endless. I used cookies and cream. You could also use chocolate, vanilla, chocolate chip, etc. Cookie dough ice cream would be bangin'!
These little guys were delicious! I love ice cream sandwiches but I hate how the frozen ones leave chocolate all over your hands and teeth. These little guys don't do that. They are really that easy to make, heck a kid could throw these bad boys together. They would be great to take along to for a Memorial Day, 4th of July or Labor Day BBQ...as long as you have access to a freezer, of course.
Ingredients: Cookies (2 for each sandwich) Ice Cream (I used cookies and cream, you could also use chocolate chip, chocolate, vanilla, or the flavor of your choice).
Instructions:
1. Place a cookie face down on a clean, flat surface.
2. Top with a spoonful of ice cream.
3. Cover with another cookie.
4. Turn the cookie sideways and roll it in a small bowl of sprinkles.
5. Keep in the freezer until ready to serve.
