Hey, y'all! Chicken is a staple in our household- we eat it at least twice a week. I love playing with different flavors such as Chicken Parmesan Pizza, Thai Peanut Chicken with Pineapple, Hummus Coated Chicken, Aloha Chicken with Mandarin Oranges, and Honey Garlic Chicken with Vegetables are some of our favorite dishes! This Chicken Scallopini recipe was inspired by my Healthy Lemon Baked Chicken- one of the most popular chicken recipes on Maps & Monograms.

Chicken Scallopini is an irresistible dish featuring perfectly breaded chicken served over bed for fresh lemon butter pasta. This dish may look sophisticated, and although it takes a bit of time to prepare, it is super easy to create. We all know that I love an easy recipe!

The key to this recipe is multi-tasking. This will help cut down on your cook time tremendously! So, while pasta is cooking, heat oil and butter in a skillet. Pound your chicken to create beautiful, thin breasts (this will help them cook faster). Next, coat the chicken with breadcrumbs and sautee it in a skillet until browned and fully cooked.

Meanwhile, bring lemon juice and chicken broth to a boil. Add in cream and simmer the mixture. Slowly add in the butter. Add the cooked pasta to the lemon butter sauce and toss to coat.

Slice your cooked breaded chicken and serve it on top of the lemon butter pasta. Garnish it with some fresh parsley and serve with Garlic Herb Knots and a salad.

Sounds easy enough, right?

Kitchen Essentials:

Large Pot (I love this one with a built in strainer!)

Servings: 4

Ingredients:

1 lb linguini pasta or spaghetti 4 chicken breasts (breaded) 1 tbsp oil, for sauteing 2 tbsp butter, for sauteing 2 cups panko or Italian breadcrumbs 1/4 cup chicken broth 4 oz fresh lemon juice 1/2 cup heavy whipping cream 1 cup, butter

Instructions:

1. Cook pasta according to package instructions.

2. Meanwhile, heat 1 tbsp of oil and 2 tbsp of butter in a large skillet.

3. Pound chicken into thin breasts. Coat the chicken in breadcrumbs (or panko) and sautee in skillet until the crust has browned and the chicken is fully cooked.

4. In a medium pan, bring chicken broth and lemon juice to a boil over medium heat. Reduce heat to medium-low.

5. Add cream and simmer until the mixture thickens. Slowly add in the butter until incorporated.

6. Add pasta to the lemon butter sauce. Toss to coat. Add salt and pepper to taste.

7. Slice your chicken breast and place them on top of the pasta. Garnish with fresh parsley and serve immediately.
