Hey, y'all! Man oh man have we been busy lately! Ever since I got back from my trip to the Caribbean, I feel like I've been running around like a crazy person! Between Easter, going away parties, birthday parties, weddings, and work I feel like I always have something going on lately. It's times like these when I turn to my good friend- pasta.
Pasta is such a great go-to dinner idea when you're coping with a hectic schedule. It is simple to prepare, easy to make, hard to screw up and is always a hit. I can seriously go to town on some pasta. One of my favorite things to do is eat a couple of pieces of pasta right out of the strainer.
Don't judge me.
For someone who is so in love with pasta, it's pretty shocking that I have only one pasta recipe on my website. One. How is that even possible? I think it's because I've always thought pasta dishes were so simple to make that literally anyone could make them without a recipe. But then I realized that's nonsense. I have been holding out on you all this time!
Pasta is the first dish I learned to cook. Actually, it was the first and second dish I learned to cook. I started out with making classic spaghetti and macaroni and cheese. Actually, if throwing a brick of ramen noodles into a pot of boiling water counts as cooking, that was the first pasta dish I ever learned to make :)
I love experimenting with different kinds of pasta dishes. I toss in various meats, a variety of different cheeses, different veggies, a dash of this and a dash of that and then play with different sauces (red, white, cheese, wine, no-wine, vodka).
Oh man.
I'm having a moment.
Let's get back to the basics, shall we? This classic Baked Tortellini dish is perfect for beginning cooks but even more perfect for busy families. From the pantry to the table, it takes a whopping 20 minutes to prepare. Now that, my friends, is my kind of dinner! The recipe starts off with frozen cheese tortellini tossed in red sauce and is topped with mozzarella and parmesan cheese.
As the Italian's say, "Oh dio mio". This stuff is bangin'.
This dish can easily transform into a fabulous Pepperoni Pizza Tortellini Bake!
Kitchen Essentials:
Ingredients: 4 cups of tortellini (either frozen or refrigerated will do) 1 1/2 cups spaghetti sauce of your choice 1 to 1 1/2 cups of shredded mozzarella cheese (depending on how cheesy you like your dishes) 3 tbsp grated parmesan cheese Parsley (for garnish)
Instructions:
1. Preheat oven to 350. Prepare the pasta according to package instructions. I typically boil mine for about 8 minutes.
2. Toss the pasta with 1 1/2 cups of spaghetti sauce.
3. Place the pasta and any excess sauce in a 1 1/2 quart baking dish. Top of shredded mozzarella cheese and parmesan cheese.
4. Bake at 350 for 8 minutes. After 8 minutes have elapsed, turn on your broiler and broil for an additional 2 minutes or until the cheese is slightly browned.
5. Sprinkle with parsley, if desired. Serve immediately.
