These delicious no-bake Under the Sea inspired "Clam" Cookies are simple to make and are the perfect treat for your mermaid and water-themed parties!
Hey, y'all! How is your week going? This weekend we celebrated my niece's twelfth birthday party. As I sat down to write up a few posts about the goodies I made for her shin-dig, I realized that I never shared these adorable "Clam" Cookies I made for her little sister's party.
So, before I share with you what I made for Frankenstein's birthday, I thought I'd share one of the treats I made for Monster's birthday! Monster turned 4 back in September and wanted to have a mermaid themed birthday party. The girl practically lives in the water, so it was perfect for her! I created a scrumptious Mermaid Bark for her birthday party, which was a total hit. The other goodie that I brought with me were these "Clam" Cookies.
What I love most about these "Clam" Cookies is the fact that they are no-bake. Can I get a whoop whoop for no-bake dessert recipes? I mean, they are seriously the greatest concept ever. If I can throw a dessert dish together without having to bake anything, I'm a happy girl!
Rather than bake cookies, I simply used Vanilla Wafers. Come on, everyone loves those little guys, am I right? I added a little swirl of pink frosting and used it as a glue for the second cookie. Inside each of the cookies I placed either a pearl or candy eyes to give the cookies a cartoonish feel to them.
Aren't they totally adorable? And seriously, they are that easy to make!
Ingredients: Vanilla Wafers Pink Icing Candy Pearls Candy Eyes
Instructions:
1. Lay a few cookies face up (flat side up) on a clean, flat surface.
2. Place pink icing in a piping bag or a Ziploc bag with a decorating tip. Add a little dollop of icing to each cookie.
3. Use the icing as a "glue" to adhere another cookie to create the lid of the clamshell. Your cookie should rest at about a 45-degree angle. Think PacMan.
4. Add either candy eyes or a candy pearl to each cookie to complete the look.
