This fresh new spin on the classic Philadelphia Cheesesteak combines all of your favorite cheesesteak flavors in an ooey, gooey, cheesy queso dip perfect for football!
Ya'll! Can you believe the big game is right around the corner? Sure, I'm excited about the game itself (even if I can't stand either team), but I'm more excited about the food! Our family doesn't play around when it comes to game day food. We go all out with our food spread, just wait until you see it on Instagram come Game Day!
In honor of the Eagles making it to the Big Game, and me being an Eagles fan for one night and one night only, I decided to play around with a Philadelphia classic- the Cheesesteak. This dip is ooey, gooey, cheesy and all things perfect for football! It tastes incredible with tortilla chips but if you have bagel chips, baguettes or French bread on hand, those are great too!
I have to tell you, when I make this queso for the family, they tear this stuff up! Even my dad, Mr. Picky McPickerson dove right in and scarfed the dip down. Trust me, that says a lot!
Now, people get pretty particular when it comes to their cheesesteaks. Some people like provolone, some people like mozzarella, others like cheddar or American. If you have a preference, simply replace the cheese in this recipe with your preferred cheese.
Ingredients:
1/2 pound sliced roast beef, chopped
1 green bell pepper, diced
1 medium-sized yellow onion, diced
1 packet Zesty Italian dressing
1/2 pound white American cheese slices, chopped
1/4 cup Parmesan cheese, grated
1 8z brick of cream cheese, softened and cut into chunks
1/4 cup Greek yogurt (plain)
Salt & Pepper, to taste
Instructions:
1. Preheat oven to 350 degrees.
2. In a large cast iron, or skillet, cook onion, green pepper and Italian dressing seasoning over medium heat for 5 minutes, or until the onions are translucent and soft.
3. Add chunks of cream cheese to the mixture. Once the cream cheese has melted, add Greek yogurt and American cheese. Stir constantly until all of the cheese has melted.
4. Turn off the heat on the stove and stir in chopped roast beef. Salt and pepper to taste.
5. Place the cast iron skillet in the oven and bake for 15 minutes (if you don't have a cast iron, you can spray an 8 x 8 pan with cooking spray and pour the mixture into there to bake it).
6. After 15 minutes, sprinkle the dip with Parmesan cheese. Bake for an additional 15 minutes. Serve warm.
