Hey, y'all! Winter has finally hit northeast Florida! And I use the term "winter" loosely here. Winter in these parts means the mercury drops into the thirties. As I'm typing this, it is a frigid 32 degrees outside and it is raining cats and dogs. We're all crossing our fingers, hoping for snow (which is a rarity here), but it doesn't look like it's going to happen. Let me tell you, there's nothing worse than it being 32 degrees and soaking wet and not seeing even a single snowflake.

The newscasters and Mayor are treating today's weather like it's the apocalypse. Government offices and the schools (that are now back in session ) are closed. All this for 32 degrees.

I just whipped up a batch of my Stuffed Pepper Soup to help keep us warm as we battle the cold, wind and rain. Stuffed Pepper Soup tastes JUST like a traditional stuffed pepper, which is one of my favorite healthy dishes. The soup starts with a rich tomato and beef stock base that is enhanced with the tastes of peppers and onions and your choice of ground meat.

What I love about this soup is how thick it is. It's almost like a stew- which makes it all that more filling! If you prefer a thinner soup, you could always add more beef stock or water to the recipe.

Ingredients: 1 pound ground beef 2 tablespoons olive oil, divided 2 cloves garlic, minced 2 14.5 oz cans petite diced tomatoes 1 15 oz can tomato sauce 1 small yellow onion, chopped 1/2 medium red bell pepper 1/2 medium yellow bell pepper 14.5 oz beef broth 1/4 tsp oregano 1/2 tsp basil 2 1/2 tbsp parsley 1 cup rice, prepared

Instructions: 1. In a large pot, heat 1 tbsp olive oil over medium heat. Add 1 pound of ground beef to the pot and season with salt and pepper to taste. Cook thoroughly, break up the beef as you stir. Drain beef. Place back into the pot.

2. Add remaining olive oil, onions, garlic and bell peppers. Sautee for 3 minutes.

3. Add diced tomatoes, tomato sauce, beef broth, and herbs. Stir. 'Bring to a light boil. Reduce heat to love and cook for 30 minutes covered, stirring occasionally.

4. While soup is simmering, prepare rice according to the package. After 30 minutes, add rice to your soup and serve.
