Hey, y'all! Brrrr! It's cold outside! The sudden drop in temperature has messed with my immune system. I'm recovering from strep throat and fighting an ear infection and upper respiratory infection. Yuck!
Cold Weather + Sickness = Soup Day!
I'm finally feeling up to cooking. The last couple of days we've been eating Won Ton Soup and Beef and Broccoli I ordered from a local Chinese restaurant. Now that I finally have some energy, it's time to whip up a batch of my taco soup.
This soup is a breeze to put together. You can prepare it on your stove top or allow it to cook in your crockpot all day. I love that it is jam-packed with veggies making this dish not only super healthy but hearty as well! I prefer my soups to be on the thick side, but if you want to extend this recipe you can always add more water or beef stock to stretch the meal.
I mean... this soup just looks pretty! Doesn't it? This recipe includes onion, corn, bell pepper, zucchini, beans and tomatoes all cooked together in a delicious ranch-infused taco seasoning that is to die for!
Ingredients: 1 pound ground meat (turkey, beef, venison, buffalo) 1 onion, diced 1 small zucchini, diced 1 bell pepper, diced 15 oz canned corn 28 oz can diced tomatoes, undrained 16 oz can beans, undrained (black, kidney or pinto will work) 2 cups water 1 package of taco seasoning 1 package of ranch seasoning
Optional: 1 jalapeno, diced & seeded

Instructions: 1. Brown the ground meat in a large pot. Drain off excess oil. 2. Add the remaining ingredients to the pot and simmer for 30 minutes. 3. Add cayenne, salt or pepper if desired. 4. Top with sour cream, Greek yogurt, shredded cheese, avocado, tortilla chips or toppings of your choice.
Notes: If you plan to prepare this in your crockpot, be sure to brown the meat before adding it to the crockpot. Add in all of the ingredients. Cook on low for 6 hours.
