Caramel Churro Chex Mix


Caution, this Caramel Churro Chex Mix is dangerously addictive! It is the ultimate crunchy cinnamon-sugary mix!

Hey, y'all! I gotta admit, I've had a lot of fun playing around with Chex Mix recipes lately- mostly because they are one of the gluten-free snacks that don't really taste like their are gluten-free. Like, the are a gluten-free treat wearing an invisibility cloak.

My latest Chex Mix recipe is a nod to my trip to Spain many years back. I remember sitting in the Puerta del Sol in Madrid, munching on a delicious churro with a dulce de leche dipping sauce. In fact, now that I think about it, this is probably where my love affair with dulce de leche stems from! If you've never had a churro, they are a fried-dough pastry typically served for breakfast in Spain, Portugal and are dipped in hot chocolate, dulce de leche or cafe con leche. These guys are sold by street vendors all throughout Spain, Peru, Venezuela, and Colombia.

Ingredients:

9 cups of Rice Chex Cereal

1 cup brown sugar, packed

1 stick salted butter

1/4 cup light corn syrup

2/3 cup granulated sugar

2 tsp ground cinnamon

Instructions:

1. Preheat oven to 350. Line a large baking sheet with foil and spray with nonstick spray.

2. Place cereal in a large, heat safe bowl.

3. In a small bowl, combine cinnamon and sugar.

4. Heat brown sugar, butter and corn syrup in a saucepan over medium heat. Once it comes to a boil, stir constantly for one minute. After one minute, remove from the heat and immediately pour over cereal. Stir until cereal is coated.

5. Spread the cereal mixture on the prepared baking sheet. Sprinkle with cinnamon/sugar mixture.

6. Bake for 5 minutes. Flip the cereal with a spatula and cook for an additional 3 minutes, or until the cereal turns golden brown.

7. Allow the cereal to cool completely. Break apart the cereal and store in an airtight container for up to 1 week.
