Who says salsa is just for the summertime? This festive salsa is made from fresh pears, pomegranate seeds, cilantro, red onion, a single jalapeno, and lime. The red, white and green colors make it perfect for the holiday season!
Hey, y'all! You know I love me an easy recipe! The easier, the better in my book! Last night I whipped up a quick and easy salsa recipe to take to my parents Christmas Party tonight. While I was making it I kept thinking to myself, "Why in the world haven't you shared the glorious salsa yet???" So, I did what any food blogger would do, I snapped a photo and shot it over to Instagram as a teaser for today's post.
I mean, isn't it a beaut? The salsa is made from fresh pears, pomegranate seeds, cilantro, red onion, a single jalapeno, and lime. Why, lime, you might ask? Well, it adds a citrusy note that makes this dish seem more like a salsa AND it helps keep your pears looking nice and fresh. Double BINGO!
Did you know that it isn't just lemon that can be used for the fresh pears/apples trick? You can actually use lemons, limes, grapefruit, orange or any similar citrus fruit to help keep your apples and pears from browning.
I'm sure you're wondering, "What in the world would I eat that with?" With salty tortilla chip, of course! The sweet, savory and salty combo is totally irresistible and will have you coming back for more.
Ingredients: 2 pears, cored and diced (the greener the better!) 8 oz Pomegranate Arils 1/2 red onion, diced 1/2 cup cilantro, stemmed and chopped 1 medium-sized jalapeno, ribbed, seeded and chopped Juice of 1/2 a lime Salt and Pepper (to taste)
Instructions:
1. Toss all ingredients together until well combined. 2. Season to taste with salt and pepper. 3. Serve immediately or store in an air-tight container for up to 2 days.
