Decadent Maple Whipped Sweet Potatoes


You've tried baked sweet potatoes, sweet potato casserole and candied potatoes, but have you tried maple whipped sweet potatoes? These deliciously creamy potatoes are an excellent addition to your holiday menu!

Hey, y'all! Lately I've been playing with sweet potato recipes- sweet potato chips, black bean and corn stuffed sweet potatoes, sweet potatoes with goat cheese and dried cranberries, etc. Yeah... I've gotten pretty sophisticated on the sweet potato front. I might even go as far as to say that I am becoming obsessed with this root vegetable. In fact, as I type this, Ashley is driving home from North Carolina with a bag full of sweet potatoes from her grandparents garden. I am already thinking of all of the incredible things I can do with those little boogers!

Sweet potatoes are a staple at our Thanksgiving dinner table. In the past, we've had them mashed, candied and even topped with marshmallows. This year, I decided to switch things up a little on the sweet potato front and make a brand spanking new dish- maple whipped sweet potatoes.

Oooooh, ahhhhhhhhhh! Go ahead, you can let it out. Don't they look amazing? I love how creamy the sweet potatoes are- they take on a mashed potato texture and aren't at all stringy like sweet potatoes can sometimes be. The hint of maple syrup elevates the sweet potatoes and takes them to a whole different level. These will be out of this world with ham or pork but also went very well with our turkey dinner.

Ingredients (Serves 10-12): 3 pounds of sweet potatoes, peeled and cut into chunks 1/4 cup half and half 3 tbsp butter 3 tbsp maple syrup 1/2 tsp cinnamon

Instructions: 1. Place peeled and chunked potatoes into a large pot. Fill the pot with enough water to cover the sweet potatoes. Bring to a boil and cook until fork tender (25-30 minutes). 2. Drain the sweet potatoes and allow to cool slightly. 3. Meanwhile, combine half and half, butter, syrup, and cinnamon in a small saucepan over low heat. Bring to a slight boil and remove from heat. 4. Use a food processor, mixer or blender to whip sweet potatoes until smooth. 5. Add the sauce mixture to the potatoes and mix until well combined. 6. Serve immediately.

Now I know what you're thinking, and the answer is YES you can make these ahead of time! I made these potatoes the day before Thanksgiving and simply heated them back up before dinner and they were perfect!

These potatoes are so deliciously creamy! They are guaranteed to have your guests coming back for seconds and even thirds!
