Pumpkin Pie Overnight Oats


A healthy protein-packed breakfast that tastes just like America's favorite dessert!

Hey, y'all! I'm back with another lip smackin' overnight oat recipe! If you haven't tried my Chocolate Chip Cookie Dough Overnight Oats or my Cinnamon Roll Overnight Oats you are missing out! Overnight oats are one of my favorite breakfast foods. I love that I can quickly whip them up at night and allow the flavors to meld together overnight. I'm telling you, there's nothing better than waking up to a jar full of yumminess in the morning!

I know they say that breakfast is the most important meal of the day butI have to admit, if I don't have a jar of oats made up for a batch of my Snatch 'Em Up Omelets prepared, chances are I end up skipping breakfast entirely. I'd much rather sleep in a few extra minutes than prepare a meal in a zombielike state. Surely I'm not alone here, right?

Enter my love of overnight oats. If you aren't familiar with overnight oats, they are basically God's gift to Earth. They are super easy to make, incredibly delicious, and the options for flavors are endless! All you do is mix together ingredients in a Mason jar and place them in the fridge. While you get your beauty sleep, the oats soak up the moisture of your wet ingredients (yogurt, almond milk, etc.) and the flavors of the ingredients you toss in the jar. When you wake up, you have a jar of deliciousness awaiting you.

Now that it officially fall, I've started playing around with pumpkin recipes. I'm in full autumn mode here at the house, I just wish the weather was a bit more cooperative. We're still dealing blazing heat and humidity here in Florida. But when if I close my eyes tightly enough, and I take a deep breath of the cinnamon broom stick in the corner and the apple scented candles I have burning, I can pretend that the weather has started to cool down. A girl can dream, can't she?

Okay, so it isn't officially sweater weather here in the south but so far I have whipped up roasted pumpkin soup, a pumpkin spice margarita and this delicious pumpkin pie overnight oats recipe. I think it is safe to say that I am one of those basic, pumpkin lovin' girls.

Ingredients: 1/2 cup plain nonfat Greek yogurt

1/2 cup almond milk 1/2 cup pumpkin puree 1/4 cup old-fashioned oats (I use gluten-free) 1 tbsp sugar 1/4 tsp ground cinnamon

Instructions:

1. Add all of the ingredients in to a mason jar or a plastic container with a lid. Stir until well combined.

2. Cover and refrigerate overnight. Serve cold.
