Hey, y'all! Welcome to Saturday's Snacks where I share with you what we're munching on during the game! Last week I shared with you my deliciously creamy Loaded Baked Potato Dip- a delicious combination of ham, cheese, fresh green onions and ranch flavors.
Can we just take a moment to talk about my love of cheese? Believe it or not... I'm lactose intolerant. True freakin' story! I have learned that some things are worth the belly ache, and cheese is one of them.
I love cheese so much that I highlight it as one of the main ingredients in a majority of my appetizer recipes. Dishes like Warm Chili Cheese Dip, Hot Caramelized Onion Dip with Bacon & Gruyere, Slammin Queso, Million Dollar Pomegranate Cheese Ball, Bacon & Blue Cheese Truffles and my Football Shaped Jalapeno Popper Cheeseball all let my favorite food shine like a Kardashian on the Red Carpet... or in front of the bathroom mirror. Oh, and yes, most of those recipes have the gloriously salty bacon in them! I definitely don't play when it comes to appetizers.
This dip most definitely a family favorite. It's always a hit when I take it to my parents for football games. My mouth is salivating right now just thinking of it! Lucky for me I have a batch waiting for me in the fridge! Before you go any further, I have to tell you this dip doesn't actually have much heat at all! My 4 year old niece tears this stuff up and has never once said it is too hot.
Ingredients:
16 oz cream cheese, softened
1 cup mayo
2 cups shredded cheddar cheese
3/4 shredded Parmesan cheese
4 oz can diced jalapenos
4 oz can chopped green chiles
1 tsp garlic powder
Topping:
1 cup pinko bread crumbs
4 tbsp butter, melted
1/4 cup shredded parmesan
Dried parsley, optional
Instructions:
1. Preheat oven to 375 degrees. Spray an 8x8 casserole dish with nonstick cooking spray.
2. Use a mixer to combine cream cheese, sour cream and garlic powder in a medium size bowl. Add cheddar cheese, 3/4 cup Parmasean cheese, and jalapenos. Mix well.
3. Spread mixture into prepared baking dish.
4. In a small bowl, combine bread crumbs, butter, parsley and remaining Parmesan cheese. Stir to combine. Sprinkle the topping over the cheese mixture.
5. Bake for 20 minutes or until bread crumbs are golden brown. Serve with buttery crackers.
