Hey, y'all! I have to tell you about my latest obsession, meatballs! Growing up, we didn't really eat a lot of meatballs and when we did, they were big old, hand rolled Italian meatballs slathered in my mom's incredible spaghetti sauce. We didn't really branch into the various different flavor combinations that meatballs lend themselves to. You see, meatballs are incredibly versatile! They can take on pretty much any flavor profile you want. You could stick with the Italian route or take your taste buds on a journey and go with an Asian, Swedish, Indian or Southwestern flavor. The options are endless!
This summer, I began playing around with different meatball recipes. All of the recipes begin with my basic gluten free recipe (there's also a breadcrumb alternative for those of you weirded out by the gluten free movement). My meatball recipe couldn't be any easier to make and the end result is a perfect, flavorful meatball that is ready for you to doll up with sauce.
One of the first meatball recipes that I played with is a Honey Garlic Meatball. Now, since we're all best friends around here, I'm going to be completely honest with you, I didn't expect to like this one so much. I made this recipe thinking Ashley would like it and I'd just kind of be like "meh", you know? In fact, I was so convinced that I wouldn't like them that I made another sauce for my meatballs that night.
Let me just say, that when I tried these bad boys I was blown away. They were so freaking delicious! In fact, I have to admit that they were even better than the meatballs that I made for myself. They were absolutely incredible! The combination of garlic, ketchup, honey and soy sauce comes together to form a sweet and tangy sauce that will have you sucking it off of your fingers! The sauce is truly that good!
This recipe makes enough sauce for about 2 pounds of meatballs.
Ingredients:
Meatballs (see my recipe)
1 cup ketchup
2/3 cup honey
3 tbsp soy sauce
4 cloves of garlic, pressed
Instructions:
Place ketchup, honey, soy sauce and garlic into a large sauce pan. Allow the sauce to cook over medium-high heat for about 5 minutes.
Add your fully-cooked meatballs to the sauce. Toss and serve.

The great thing about this recipe is you can coat the meatballs in the sauce and freeze them to use on a busy night. I served them with mashed potatoes, simply because we had leftovers in the fridge, but these would be excellent with rice and oven roasted asparagus as well! Since there are only two of us, we had leftover meatballs for lunch the next day and I have to admit, they were even more delicious the next day!
