Crock Pot Pork Tenderloin with a Balsamic Glaze

Hey, y'all! School is back in session which means I'm all about making dinner as easy as possible. Some of my favorite weekday meals are the ones that I can toss into a crock pot at the butt crack of dawn and forget about while I'm at work.

Lately, I've been playing around with balsamic glaze recipes. It all started with my favorite Shredded Bliss Salad and grew into sides like Roasted Brussels Sprouts with a Balsamic Glaze, and Grilled Watermelon Salad with Feta. This is dish was my first attempt at making an entree with balsamic glaze and I have to admit, it turned out pretty bangin'.

Preparing a meal, such as a pork tenderloin, might sound daunting to some people but I assure you this dish involves very little prep work and the end results are amazing! Simply mix together the herbs with a bit of garlic and rub it all over the tenderloin. Add some water and boom! You're done...at least for a couple of hours. An hour before serving, simply prepare a quick and easy glaze, apply it to the meat and allow it to finish cooking while you unwind with a glass of red wine.

It is as simple as that and I'm telling you, it will taste like you've been sweating over a hot stove all day.

Ingredients:

2 lbs pork tenderloin

1 tsp dried thyme

1/2 tsp salt

1/4 tsp pepper

1 clove garlic, crushed

1/2 cup water

2 tbsp soy sauce

1/4 cup balsamic vinegar

1 tbs cornstarch

1/2 cup brown sugar

1/2 cup water

Instructions:

In a small bowl, mix thyme, salt, pepper and garlic to form a delicious seasoning blend.

Rub the mixture all over the tenderloin. Place 1/2 cup of water in a slow cooker. Place the tenderloin in a slow cooker and cook on low for 6-8 hours.

One hour before serving, mix together brown sugar, balsamic vinegar, water, soy sauce and corn starch in a small sauce pan for form the glaze. Heat over medium and stir until the sauce thickens. This will take approximately 4 minutes.

Brush the roast with the glaze 2 or 3 times during the last hour of cooking. Serve with the remaining glaze on the side.

If you would prefer a crispy crust, rather than putting the glaze on the pork and putting it back into the crock pot, you can place the pork on a sheet pan lined with aluminum foil. Brush the roast with the glaze and put the pork under the broiler for 1-2 minutes or until it is bubbly and caramelized. Repeat 2 more times until you have a lovely crust on it.

Isn't it gorgeous? You can serve the tenderloin in slices or shred it, whichever your prefer.

I prefer to slice mine into adorable little pork steaks. I used the leftover glaze to make some super yummy carrots to go along with the dish. I have to say, it was pretty stellar!
