Hey, ya'll! I have to be honest with you, I don't touch the grill. Ever. Throwing down meat isn't my thing. I'm a side dish, appetizer, and dessert kind of gal so when I stepped behind the grill this Memorial Day, it was kind of a big deal.
You see, I picked up my first watermelon of the season and I had big plans for that little guy. I was going to make a grilled watermelon and feta salad. Now, I don't actually like watermelon but I mean...nothing says summer like watermelon! Am I right?
Have you tried grilling fruit before? Grilling fruit helps bring out the sweetness. Fruits like pineapple, peaches and watermelon taste incredible after a few minutes on the grill.
The sweetness of the fruit pairs incredibly with salty feta and tangy balsamic glaze.
This salad is perfect for summer and it couldn't be easier to make!
Ingredients:
1 mini watermelon
4 oz of crumbled feta
2 tbsp of fresh basil, sliced thin
Balsamic glaze
Instructions:
1. Cut the watermelon into 1 inch thick steaks. Place the melon cut side down onto a heated grill. Grill each side for 2-3 minutes or until warm.
2. Once the melon has been removed from the grill, cut off the rind. Cut the melon into 1 inch cubes.
3. Top the watermelon with basil and feta cheese. Drizzle the salad with balsamic glaze. Serve immediately.
