The Best Damn Fruit Dip


Hello, friends! Earlier this week I told you all about my family's morning at the lake. We had a lovely picnic breakfast with a delicious ham and egg casserole, orange rolls, and my mom's Lemon Cheesecake Crescent Rolls. In true Elle fashion, my contribution involved booze. I brought along mimosas (with more champagne than OJ) and a bowl of fresh fruit served with the best damn fruit dip. I mean, it's not a picnic without a big bowl of juicy, freshly cut fruit, right?

Ingredients:

32 oz low fat vanilla yogurt

8 oz Lite Cool Whip, thawed

1 packet of pudding (your choice of flavor)

Fruit, for serving

For this recipe, you can use any flavor of pudding you'd like. I used Pistachio but it would also be amazing with vanilla, cheesecake, banana cream, or any of the fruit flavors. Get wild! This is your chance to play around with different flavors to see which you like best.

Directions:

In a medium sized bowl, combine yogurt, Cool Whip and pudding packet. Stir until completely combined and there are no lumps. The mixture will be gritty, at first, but will dissolve after resting.

Cover with plastic wrap and chill for 30 minutes to allow the pudding to dissolve completely into the mixture.

Dice an assortment of fruits of your choice. I used strawberries, watermelon, melon, grapes, pineapple and tangerines to form a gorgeous, colorful mixture of fruits.
