Snatch 'Em Up Omelets


Hello, friends! Do you eat breakfast each morning? I have to be honest... I'd rather get a few extra minutes of sleep than wake up and make breakfast each morning. There's something about those precious, quiet minutes that make or break my day. Of course, since I'm snoozing away my morning, this often means I don't eat breakfast.

I know what you're thinking; Breakfast is the most important meal of the day. I've found a simple solution to the sleep vs. food conundrum- make ahead breakfasts. I've recently started making grab and go foods to help me kick off my mornings. Things like my Mama's Tired Energy Bars are a great source of protein and energy to carry me through until lunch time. Another one of my favorite grab and go foods is omelet muffins.

Ingredients:

4 Eggs 1/4 Cup of Milk 1/2 teaspoon of Baking Powder Salt & Pepper Grated Cheese (Your choice, I used Cheddar) Favorite Omelet fillings

Directions:

Preheat your oven to 375 degrees.

In a frying pan, cook up your favorite omelet ingredients. These can be foods like onions, bell peppers, diced ham, spinach, etc.

Meanwhile, mix egg, milk, baking powder, and salt & pepper in a medium sized bowl. Set aside.

Grease a 6 spot muffin tin. Fill each muffin cup with cooked omelet ingredients and top with shredded cheese.

Pour egg mixture in each muffin cup. You should fill each about 3/4 of the way to the top. Bake for 20-25 minutes.

Allow the eggs to rest for 5 minutes before eating or storing.
