Jacked Up Asparagus is one of my favorite way to eat asparagus! It is a delicious combination of bacon, mushrooms, onions and asparagus!
Hey, y'all! Isn't it funny how much our taste buds change over the years? When I was younger I wouldn't ever touch things like spaghetti squash, Brussels sprouts or asparagus, now they are some of my favorite foods! I'm telling you, if my mom prepared asparagus this way when I was younger, I would have torn it up! This recipe is guaranteed to make anyone love asparagus!
Weirdly enough, I don't like mushrooms yet I love this dish! The mushrooms give the asparagus an incredible flavor that will keep you coming back for more. This dish goes well with chicken, pork or beef. It makes an excellent addition to your holiday menu but is also great for barbecues!
Ingredients:
6 pieces of bacon, cooked
1 pound of asparagus, cut into thirds
8 oz of sliced mushrooms
1/2 medium sized onion, diced
Instructions:
1. In a large skillet, prepare 6 slices of bacon until fully cooked. Set the bacon aside. Save the bacon grease!
2. Add the asparagus, mushrooms and onions to the bacon grease (oh yes I did!!)
3. Cook the asparagus, onion and mushrooms in the bacon grease for about 10 minutes, stirring frequently. Add bacon to the mixture and continue to cook for 1-2 minutes. Serve immediately.
