Hello, friends! Spring has officially sprung which means one thing in my household, it's time to break out the citrus! Citrus is a huge part of the Floridian culture. We're known for our orange groves and our key lime pie. This Easy as Pie Key Lime Dip is a fresh take on the classic Floridian dish.
Ingredients:
1 Edward's Key Lime Pie
1 box of instant lemon pudding mix
1 cup of cold milk
8 oz of thawed whipped topping
graham crackers, shortbread cookies, cinnamon pita chips or pretzels for dipping
Lime Zest for garnish (optional)
Green food coloring (optional)
Allow the pie to rest on the counter for about 10 minutes to allow it to thaw slightly. By keeping it partially frozen, it makes it easier to break the pie up into pieces.
While the pie is thawing whisk together milk and pudding mix. Allow the pudding mixture to set for about 3 minutes.
Gently fold in the thawed whipped topping.
Use a knife to cut 1/4 of the pie into bite sized pieces.
Slowly fold the piece of pie into the dip mixture.
Crush a few graham crackers on top or grate fresh lime zest on top of the mixture and serve with graham crackers, shortbread cookies, cinnamon pita chips or pretzels for dipping.
If you want to make it festive for a holiday such as St. Patrick's Day you could simply add a couple of drops of green food coloring into your dip to make it a bit more green.
