Hey, y’all! Who says fries have to be made from regular old potatoes? These days, fries can be made from pretty much any vegetable. My family loves sweet potato fries, zucchini fries, and carrot fries.
What I love most about this recipe, aside from the crunch of the carrot, is probably the garlic powder. I know that might sound a bit crazy but the garlic powder takes the carrots to a whole new level that makes them absolutely irresistible. I seriously cannot get enough of these carrot fries!
How do I make carrot fries?
No matter which vegetable you choose, the process is pretty much the same. You clean and scrub the vegetable, cut in in half lengthwise and then in half again, coat them with some olive oil, season them with your favorite seasoning and bake them until they are crispy. The cooking time will vary, depending on the vegetable but the outcome is always tasty.
Are carrot fries healthy?
As with anything, moderation is the key. Carrot fries aren’t unhealthy but they do have some carbs in them, both naturally and due to the bread crumbs. Carrots are healthier than both potatoes and sweet potatoes. They are a great way to make sure your plate is colorful. Carrots also have great health benefits and help to build up your immune system against certain diseases such as cardiovascular disease. Carrots are also full of vitamins, which help make the body good and strong.
A cup of raw carrots themselves only have about 50 calories, so carrots themselves are great for weightloss.
That being said, carrot fries are relatively healthy. They have wonderful properties that make them good for your body and by baking them, rather than frying them, makes this dish all that more healthy. But again, as with anything, moderation is the key.
Are carrots keto-friendly?
Carrots themselves naturally have about 7g of net carbs per 100g serving. When you add in the breadcrumbs, it kicks up the carb count. In general your body should only have about 20-50 grams of net carbs a day in order to go into ketosis. That being said, depending on how many carbs you’ve had that day you could totally have these fries if you’re on the keto diet. You could swap the bread crumbs out for pork rinds to cut back on the carbs some, as well.
Ingredients
3 medium carrots, cleaned and scrubbed 1/2 C bread crumbs 1/4 C Parmesan cheese 1 Tbsp olive oil 2 tsp garlic powder 1 tsp salt 1 tsp pepper 1 Tbsp fresh parsley, chopped Instructions
1. Preheat oven to 400 degrees Fahrenheit.
2. Cut carrots in half. Then cut each half into several thin strips.
3. Mix bread crumbs, Parmesan cheese, garlic powder, salt, and pepper together in a shallow dish.
4. Toss carrot strips in olive oil. Then place in bread crumbs and cheese mixture and coat.
5. Put carrot fries on a cookie sheet lined with parchment paper and bake for 15-20 minutes or until browned and crisp. Remove from oven and top with parsley, and a sprinkle of salt. Serve warm and enjoy!
