Monster Eyeball Rice Krispie Treats


These yummy bite-sized balls of crunchy marshmallow treats are the perfect way to celebrate Halloween!

Hey, y'all! Rounding out this week's posts featuring fun, kid-friendly Halloween treats are these Monster Eyeball Rice Krispie Treats.

This recipe begins with my classic Rice Krispie Treat recipe. I keep it simple and use a 2-2-2 ratio; 2 tbsp butter, 2 cups mini-marshmallows, 2 cups cereal. This ratio will make 10-12 balls, depending on the size. If you're planning on making multiple colored monsters, you'll want to make a batch for each color you plan on using.

Pro-Tip: Add the food coloring BEFORE you add the Rice Krispie cereal. It's much, much, easier to blend it into the marshmallows.

Make sure you allow the mixture to cool down enough before you handle it but it is still malleable. I like to spray my hands with non-stick spray so that my hands don't get all sticky.

Once you have formed the balls, press a large candy eyeball into the mixture. You may need to mold the mixture around the candy to secure it in place. When the treat cools, it will help hold the eyeball in place.

Make sure the treats have cooled completely before storing them in an airtight container.

Ingredients:

Rice Krispies Cereal

Butter

Mini-Marshmallows

Food Coloring

Instructions for a Single Batch:

  1. Melt 2 tbsp butter in a medium-sauce pan.

  2. Add two cups of mini marshmallows. Stir until the marshmallows have completely melted.

  3. Remove the pan from the stove. Add food coloring until you've achieved your desired color.

  4. Add 2 cups for Rice Krispie cereal and mix until the cereal is completely coated.

  5. Allow the mixture to cool slightly.

  6. Roll the cereal into a ball.

  7. Place a large candy eyeball in the center of the ball. Mold the cereal around the candy to help hold it in place.
