One of my favorite meals is pad Thai. This Sweet Potato Pad Thai has everything you love about traditional pad Thai- the vibrant, spicy peanut flavors, the tanginess of Thai chili sauce, and a crunchy peanut topping. I'm salivating just thinking about it!
One thing that I love about this dish is you can spiralize other veggies to form other noodles as well. All though I only used sweet potato, I've also made this with zucchini, yellow squash, and spaghetti squash. I can envision spiralized carrots in this dish as well. YUM!
Did you know that many grocery stores are now selling spiralized vegetables? My Publix started carrying them recently, so even if you don't have a spiralizer you can make this dish!
Ingredients:
1 sweet potato
2 tbsp peanut butter
1/4 tsp rice wine vinegar
1/2 tsp soy sauce (gluten free soy sauce if you want this dish to be gf)
1 tsp water
1/2 tsp honey
1 tbsp sweet Thai chili sauce
1/2 tsp salt
Olive oil
Optional: lime wedges, cilantro and crushed peanuts for garnishing.
Instructions:
1. In a medium sized bowl, combine peanut butter, soy sauce, honey, rice wine vinegar, chili sauce, salt, pepper, and water.
2. Spiralize 1 sweet potato.
3. Heat olive oil in a large saute pan over medium high heat. Add your spiralized veggies and cook for 7 to 9 minutes or until "noodles" are cooked. You may need to use 2 different pans or cook the sweet potato in two batches.
4. Toss in the sauce and serve with fresh cilantro and crushed peanuts.
Tip: Depending on the freshness of your sweet potato, you may want to add another tbsp of sweet Thai chili sauce.
The great thing about this dish is that the sweet potato noodles take on all of the flavors of the Thai peanut sauce. When you're eating it, you won't even realize that your eating a veggie instead of actual noodles.
I have to admit, I am absolutely in love with this dish! It tastes just as yummy as the pad Thai that I order from my favorite Thai restaurant but has fewer calories. You could do a lot to switch up this recipe. As I mentioned before, there are a ton of different vegetables that you could spiralize and incorporate into the noodles. You could also add bean sprouts, beets, swap out the cilantro for basil or add tofu, chicken, shrimp or even beef. The options are endless! You can add in all of your favorites and make this dish all your own. Another great thing about this Sweet Potato Pad Thai is that it takes only 10 minutes to prepare and the recipe couldn't be any easier!
